Wow, did we ever have some cold weather in January & February! I suppose I’m glad – it makes me feel a little better about global
warming. Maybe less insects this summer . . . and the proper bloom time for daffodils, forsythia, quince, cherry trees, etc.
The weather really does seem to be at extremes. Speaking of the weather, did you know that the RTP area has changed in its
hardiness zone! That’s right – we have gone from Zone 7B to Zone 8. I think that’s as good a measurement on global warming
as anything I’ve seen. You can go to http://arborday.org/media/map_change.cfm to see the change from 1990 to 2006.
Well, there is so much to update you on, I better jump right in!
First, thanks to the many of you who responded to the 2007 survey. Your responses were so very helpful! And based on these responses,
I am excited to tell you about some of the changes you will see starting in March at The Little Herb House.
Many, many of you requested that The Little Herb House open for several days a month on a regular basis. Most of these requests
were for one day during the week and on Saturdays. So, beginning March 10, The Little Herb House will be


Open for Business
Every Tuesday – 10 am to 3 pm, and
Every 2nd & 4th Saturday – 9 am to 3 pm
That’s right, no appointment is necessary, just bring your friends and come on out! You can still make appointments for other days
of the week, but these will be regular business hours effective March 10. Plus, another new offering to go along with your visit, will be
boxed picnic lunches!! Many of you requested having lunch with a few friends while visiting, as opposed to a larger group/club luncheon.
After talking over the options with my caterer, Unforgettable Food Affairs, she has offered a delicious menu to choose from. All that’s necessary
to order a boxed picnic lunch for the day of your visit is to call or e-mail your order by 2:00 pm the day before your planned visit. You can pay for

In addition, many classes/workshops will be offered on these days. I am so excited to offer the below schedule for the Spring 2007

Learn about this year’s Herb-of-the-Year: Lemon Balm. Lisa will discuss the history & herbal lore, cultivation, uses, and recipes for this wonderful, lemony herb. Participants receive an informative hand-out with recipes, a 4-inch pot of Lemon Balm, Quedlinburger Niederliegende (this variety has twice the essential oil content of regular lemon balm and is hardier and more productive!), a 2-inch pot of the Lemon Balm Scented Geranium, and a 2-oz. jar of Lemon Balm Salve (great for cold sores & other skin problems! $12.00 value). |

“From Strawberries to Roses” Spring Brunch/Class |
Come celebrate two of this season’s finest crops: strawberries and roses!! We will begin with a brunch, featuring two teas (Chocolate Strawberry & Rose Petal), cold strawberry soup, spinach salad with strawberries, chicken salad croissants, chocolate covered strawberries, and rose-scented geranium cake!! While you dine, Gary Derrick, tea ambassador for The Republic of Tea, will teach us everything we’ve always wanted to know about the art of drinking tea; then Lisa will present a class entitled “How to Eat a Rose!” Participants will receive Jim Long’s book by the same title ($6 value), a bag of “Old-Fashioned Rose Potpourri” ($10 value), and 4-inch potted rose-scented geranium ($4 value). This class would make a great Mother’s Day gift to moms, grandmothers, sisters, and yourself! Gift cards will be available for purchase in advance of Mother’s Day and will be presented in an envelope with a card describing the brunch & class – what a unique, special gift to give! |

“Designing, Planting & Using an Herb Garden” Workshop |
If you are thinking about planting your first herb garden, then this class is for you! Participants will draw out a garden design on graph paper and then carry their plan home for planting. Each attendee will receive 6, 4-inch potted herb plants ($18 value) to begin their gardens. Arrive at this class knowing approximate location and dimensions of your garden, orientation of sun exposure, and what you would like to use your herb garden for - Lisa will take it from there! |

“A Culinary Day at the Herb Farm” Luncheon & Class |
This will be a day to remember! Lisa will welcome you to the farm with the graciousness of any southern hostess! Tour the herb gardens at 10:00 am while sipping an herbal cordial. Then, Lisa will present a class entitled, “Using your Herb Garden to Stir it up in the Kitchen.” Each participant will receive a book written by Renee Shepherd (founder of Renee’s Garden Seeds) entitled "Recipes from a Kitchen Garden” ($12.95 value). Then get ready to feast and savor all the herbal delights found in Lisa’s gardens with an Herbal Luncheon! This promises to be a class that will fill up fast (limited to 24 people), so get your registration in early.

“Stevia: The Sweetest Herb of the Garden” Class |
Sip iced herbal teas, sweetened with stevia, while Lisa discusses the history, cultivation, harvest, and uses for this herb known as the “sugar herb.” Anyone interested in cutting their sugar intake (diabetics, dieters, vegans and natural-food lovers) should attend this class. Each participant will receive the book: Stevia: Naturally Sweet Recipes for Desserts, Drinks, and More by Rita Depuydt ($14.95 value), a white porcelain spice jar filled with ¼ oz. of pure stevia (90% steviaside extract) white powder ($7.95 value), and a qt.-potted stevia herb plant ($5 value). |

The Little Herb House reserves the right to cancel any class due to low registration. If classes are cancelled, you will receive a full refund, or you may choose to apply your refund to a future class. If you are unable to attend a class that you have pre-registered for, a Little Herb House gift card will be issued in the amount of the missed class fee (less any % discount that was taken). China Bayles Herbal Mysteries
